Using cold water or ice water added as the cooling method. For ales most cellars have perfect fermentation temp. throughout the year. If I get some extra cash some day I will purchase of the temp. controlled fermentation vessel. They have a cooling jacket welded to the metal body of the fermentor with of course control for the temp.
